This company began with artificial caviar.
While some imitation caviar products are made by coloring the roe of fish other than sturgeon, such as lumpfish, black, the artificial caviar produced by K.K. Hokuyu Foods under the brand name “Cavianne” features a two-layer structure created by applying gelling technology.
As a result, it does not transfer color to other foods and has attracted attention for its low fat content.
人工キャビアから始まった会社です。人工キャビアにはランプフィッシュなどチョウザメではない魚卵を黒く着色したものも存在しますが、「Cavianne」のブランド名で展開している㈱ホクユーフーズの人工キャビアは、ゲル化の現象を利用した二層構造。そのため他の食品への色移りが無く、脂質が低いことでも注目されています。

By applying the principles used in artificial caviar, we can also create single-layer beads that readily absorb color and flavor.
In recent years, we have succeeded in developing a salmon roe alternative that can be used in confectionery ingredients and in sushi, one of the most popular Japanese foods worldwide.
We are currently working to expand overseas sales of this product.
人工キャビアの応用で、単層構造とすることで色や味の染み込みやすい粒を作ることもできます。近年では菓子原料や、日本食の中でも特に人気の高い寿司に使える人工いくらの開発に成功しています。人工いくらは「いくらビーズ」の名称で海外展開に取り組んでいます。

The gelling technology developed through this work is also applied to jams and jellies.
Aomori Prefecture is famous for its apples, and our product series, which allows customers to enjoy the distinctive flavors of different apple varieties, has been well received as a tasting assortment.
